There are 3 standard ways that an eCommerce store can take payments from its customers.
The kind of payment will determine whether to generate payouts Per Order, Daily, Weekly or Monthly.
The simplest form of payment. If your customer pays you cash or makes a direct deposit into your bank account, you are being paid directly.
Because you get 1 payment per order, you should create a payout for each order. Choose to generate payouts 'Per Order' on your dashboard.
This is the most common way eCommerce stores get paid.
Your customers don't pay you directly. They pay using there credit card or using a payment gateway like PayPal. Then Visa/Mastercard pay you, or you transfer funds from PayPal to your bank account
In this case you don't need to reconcile each order indivdually. Save time by generating payouts Daily, Weekly or Monthly in Open Payout
Etsy works this way. Your customers pay Etsy and then Etsy pays you a disbursement.
This is the easiest kind of payment to reconcile. Open Payout will generate a payout for each disbursement you receive. There's no reason to generate payouts Daily, Weekly or Monthly so Open Payout won't show you those options for your Etsy store.
